Our story

Built by alumni, for campus.

Two friends who met at UCF, and a café a few hundred feet from where it all started.

How it started

From Memory Mall, back to Memory Mall

Ricky and David met at UCF. They became roommates and great friends, and spent years on Memory Mall between classes.

After graduating, Ricky set out to learn coffee from seed to cup, and David went into tech, managing projects at UCF and mentoring students along the way. Neither ever lost touch with the campus or the city.

Orlando has a thriving coffee scene, and they felt it deserved a place on one of the country's largest campuses, run by people invested in both the city and the school. So in March 2026, they pitched a specialty café to UCF.

Now Weekday sits right off Memory Mall, a few hundred feet from where it all started.

Who we are

We know the work

We're not a corporation. We're two alumni who put in the work: the dish pit, the 5 a.m. prep shifts, the long nights figuring it out.

We know what the school week feels like because we've lived it. That's why we built somewhere to take a break from it.

Sourcing

How we chose what we serve

Our espresso starts with friends. The Sánchez family, the family of a UCF student, grows coffee in San Andrés, Lempira, Honduras. We have a direct relationship with the family, with no middleman. Their coffee makes up most of the Weekday Blend, roasted by our good friends at Lineage Coffee Roasting.

We wanted to showcase the amazing profile of this coffee, so we kept it a light-medium roast and added a dry-processed Ethiopian lot for those classic berry notes. The result is something a coffee enthusiast will love, and an easy first sip for anyone new to specialty coffee.

In house

Specialty coffee at campus scale

We understand the scale of UCF. We built Weekday to bring specialty coffee and matcha to a whole campus while keeping the part we care about most: making things in house. Every syrup is made by our team, in our own prep kitchen.

Ricky

Sport & Exercise Science, '17

A first-generation American and first-generation college grad, Ricky grew up in a Colombian and Cuban family where coffee was always on the table. Some of his favorite UCF memories are the everyday ones: early mornings before exams and afternoons on Memory Mall.

After graduating, he wanted to understand coffee from seed to cup. He started by washing dishes for free at a nonprofit café, then trained with the Specialty Coffee Association in California. He spent a couple of years at Lineage Coffee Roasting, where he built incredible friendships and met amazing people in Orlando's coffee industry, and has trained baristas across the city and worked directly with producers in Latin America. Opening Weekday a short walk from Memory Mall brings it all full circle.

David (Benji)

Integrated Business, '21

David spent his college years in student organizations and around Memory Mall and the Reflection Pond. An internship on UCF's Workday rollout led him into project management, and after graduating he stayed at UCF as an IT project manager and a mentor to many students.

He's always been business-minded, with a real passion for seeing his friends' dreams come true, and he's helped launch several of their ventures. Proudly South Indian, he has brought warmth and a sense of belonging to every circle he's been part of. Weekday is his chance to do that for the whole campus.
